Our Merchant series celebrates culinary traditions around the world and the trade systems that led to their creation. This rendition is a riff on the popular Mexican drink, Tepaché. What started with the Aztecs as a fermented maize drink has evolved over the years as merchant sailors have established trade routes across the Pacific. Our modern version includes Mexican peppers, Hawaiian pineapple, Vietnamese cinnamon, Japanese black sugar, and Indonesian cloves.
